Debbie Brown Workshop

This was a great workshop with Debbie Brown from UK. It was held at My Cake Delights in Preston hosted by John Quai Hoi.
It was a great night and Debbie demostrated from scratch Sylvester and Tweety cake from one of her books.
It was just amazing to see a beautiful cake made up within a few hours.

It was Jojo's birthday and made a marbled mudcake.
On top are three Sesame Street characters.

Sugar Orchid in a cup



Super Heavy Strawberry Chocolate Layer Cake

This is my super heavy Strawberry Chocolate Layer Cake.
I say that because I used a full punnet of strawberries squeezed into this little 20cm cake.
I put them in layers of sponge cake, cream, sliced strawberries and repeat.
I coated it with chocolate ganache and topped some more strawberries on top.
From memory the cake totally weighed 2 kg.

Birthday cake for Rugby Fan

This was a cake made for a fan of the Manly Sea Eagles NRL Rugby club. It is a chocolate mudcake decorated in the Manly colours of Maroon and White and topped with exploding stars.
The main critic I have with this is the piping and the colours for the cake. The royal icing was slightly dry and didn't pipe as clean as I wished it to be.
Also the white did not come out as I wanted it to be.


Cupcakes for Afternoon tea

Kids kinder a afternoon tea party and made up a batch of banana cupcakes which has been topped with melted fondant coloured light blue and piped some pink blossums.
I was told these cupcakes dissappeared very quickly. Thats a good sign.

Back Again!! Boy it has been a while.

After a very very long hiatus I figure it was time to me to update this blog of mine.
Lots of things has been happening since my last blog and basically have been running around everywhere.
There are a few things which I hope will take off and I will up date you at a later date. We have also been looking at building a new home.
This is the biggy for us. We have been house shopping and finally decided a knockdown and rebuild of our current home was the way to go. In saying that there are so many factors that increasing our cost. One of them is a land title issue which we are trying to resolve.
Anyway, that has nothing to do we baking :P
I will be updating some of things that has been keeping me busy in the last few months and hopefully be more regular with blogging.

Am I a Barista now?

This is something I always wanted to do. Since coffee is such a staple in my daily grind I always wanted to know how to make the right coffee. The course was held in the city and itself was a full day with plenty of practice time. At the end of the course I would have made more than 40 cups of different coffees. The amount of wastage was a little shocking at first but after going through the first several litres of milk and coffee you just don't worry about it.
The instructor went through all the different coffees and chocolate drinks and the function of the machine and correct pouring methods. Then the second part of the course involved coffee art which was just as fun.
Thoroughly enjoyable day and at the end get certified.
Yep, I am certified barista now, well that is what the paper we got at the end of the course tells me.

Cherry Blossom Cupcakes

This is a cupcake I was meaning to do for awhile. The cupcake itself is a double chocolate cupcake filled with white chocolate ganache and topped with cream cheese frosting.
I then covered the cake with pink fondant and spotted with quick and cheerful cherry blossoms.
I really need to work on my lightling for the cakes. It is always inconsistant and either yellow or white but never as bright as some food photo sites online. Maybe a newe camera for setup some proper lighting equipment.

Orange Chiffon Cake

Made an orange chiffon cake filled and covered with orange cream and covered with lightly roasted almonds.
Not a big fan of this cake because of the amount of eggs involved and cream squeezed in on request.

Red Velvet Cupcakes topped with Cream Cheese Frosting

Originally this would have been the valentine cupcakes and also planned to top each with a few red hearts and cherry blossoms but didn't get around to making them before the dinner.
I enjoyed the taste but few people were not comfortable with the red colour that is part of this cake. Chances are this will only be make on request but still a good experience.

Happy Chinese New Year - 恭喜發財

Yes, It is Chinese New Year and I made up a mud cake and shaped it into a chinese gold ingot.
Covered it with gold dust to give it that bling.
The small little red things are supposed to be red envelopes.
All's well for another year as this year being the year of the Metal Tiger which is associated with big changes and social disorder. Interesting...

Valentines Day

This year Valentines day falling on the same day as Chinese New Year. I originally was going to make a cake for Valentines and another for Chinese New Year but would be too much effort and too much to finish since family has gone overseas for a month.
So I am currently working on a cake for Chinese New Year and just whipped up a quick Valentines treat for one.
Made hearts out of egg and ham thanks to Aeri's blog.

Sad Day - RIP Brauny

Today is a sad day for me. My good and trusted friend for the last 6 years has given up the go and packed it in.
That is my Braun electric hand mixer. Did almost everything with my little friend, whip, blend, chop, grind...everything. And now feel lost without it. I think I over worked it trying to puree some prunes. Smoke started coming out of the motor which was first sign it was over. baahaa :(
Trying to do things completely manually is like going to the stone age.
Now on the hunt for a new hand mixer. Saw Braun Hand mixers comes in 600W. That's 100 more than my old one.
Just keep an eye for them to come on special.
RIP my little friend.

My Bubblegum page gets a long overdue rebuild. I have been longing for an update for over a year now that I feel is more suitable than the plain template that comes from blogger. It is still not fully what I am looking for but will do for now. Me a very happy happy Bubblegum..Hehe..

Will's "Rolada" - Prune and Walnut Log

My wife introduced this treat called Rolada which is found in the gourmet section of your deli.
These little treats seems to be becoming popular and it best served along a cheese platter with crackers and a nice glass of wine or coffee.
Effectively it is a Prune and walnut or fig and walnut logs.
I tasted it and looked at the ingredients and thought can't be that hard to make. And it wasn't. There aren't any definitive recipes that I could find anywhere so I played with the flavours and recipe till I thought it was right. It is a mix of prunes, walnut, sugar, lemon and honey. Rolled them up and slow baked and bingo.

Hong Kong Egg Tarts

It has been a while since I made a batch of egg tarts. I love them and started making them when I was in Canberra years ago. I resisted from making them now since one of my children has a slight egg intolerance.
I make the Hong Kong version with the puff pastry as that is the one I know and love the best.
